Our aim was to recreate a classic blend that would evoke the Malvasia enjoyed by wealthy Madeiran families in the 1950s. From the selection of wines in the demijohns of Mário Barbeito and Manuela Vasconcelos, we chose Malvasia wines that were elegant but not overly sweet. We added a wine from the early 1970s with aromatic intensity and high acidity, which was very concentrated in sugar due to excessive time in the cellar. We had to add a dry Malvasia from the 1930s with little oxidation to lower the batch's Baumé reading and maintain the acidity/sugar balance.
