Benoit Lahaye has raised the bar with this elegant, sulphite-free champagne. Violaine is a champagne that aims for the pure expression of fruit. Biodynamic viticulture and continuous work in Lahaye's vineyards produce a crystalline raw material that he treats gently in the cellar, without sulphur, filtration or added dosage. The blend is made up of 50% Pinot Noir and 50% Chardonnay from the Bouzy and Tauxières vineyards on limestone soil. A champagne bursting with umami flavours, extremely light, silky and complex.
