A magnificent dry white wine, Corton-Charlemagne Grand Cru has a wonderful texture and well-balanced acidity, with a powerful, bright, mineral flavour and a rich aroma, created by the conditions of Chardonnay growing on the limestone soils of the Côte de Beaune. The grapes used to make this wine come from 50-year-old vines around the villages of Pernand Vergelesses, Aloxe Corton and Ladoix Serrigny. Before the wine is made, the grapes undergo a double control. The first time they are carefully selected during the manual harvest and then sorted again in the winery on special tables. The must is obtained by soft pressing. Alcoholic fermentation and malolactic fermentation with the participation of natural bacteria take place in 228 litre French oak barrels, 30% of which are new. Aging on the fine lees lasts about 18 months. 30 days before bottling, the wine is transferred from the barrels to a stainless steel tank for blending. Before bottling, which is done according to the lunar calendar, the wine is clarified and lightly filtered.
