Rabo de Ovelha has a distinctive aroma that differs from the traditional "talha" style. It presents intriguing notes of marmalade and jam, abundant orange peel, a hint of resin and sour apple. On the palate, it is light but pronounced, characterised by a remarkable dryness and salinity, with minimal acidity. The finish is exceptionally long and reminiscent of Jerez.
