The wine is mainly made from destemmed grapes, which make up 95% of the vat. During fermentation, there is minimal extraction and the process is driven by indigenous yeasts. No external products are added, except for a small amount of sulphites. After fermentation, the wine is aged for 12 months in used barrels and remains unfiltered.
Its aromatic profile is marked by notes of black fruits, vegetables, damp earth, minerals and smoke, especially limestone. On the palate, it is rich with an enveloping texture, showing elegance and gastronomic potential. Ideal serving temperature between 16ºC and 18ºC.
It is an excellent accompaniment to red meats and soft cheeses, enhancing the dining experience with its complex flavours and structure.
