This wine boasts a distinct aroma characterised by prominent black fruit, vegetal nuances, and earthy undertones, with mineral and smoked notes hinting at limestone. On the palate, it offers a rich and enveloping texture that exudes elegance, making it a perfect companion for gastronomic delights.
The wine-making process involves filling the vat with 95% destemmed grapes, followed by low-extractive "reassembly" and natural fermentation using indigenous yeasts. With a commitment to purity, no exogenous products were added to the grape, except for a minimal dose of sulphites. After ageing for 12 months in used barrels, the wine remains unfiltered, allowing its true character to shine through.
