Filipa Pato Dinamico Branco 2022

Filipa Pato, a chemical engineer by training, began her journey in winemaking with harvests in Bordeaux. Since 2001, she has been making natural wines in Bairrada with her Belgian sommelier husband, William Wouters. One of their outstanding creations is Dinamica, a blend of 80% Bical and 20% Arinto grapes, grown biodynamically. The wine is fermented in stainless steel tanks and large wooden barrels, then aged for 5-6 months before bottling. Dinamica offers enticing aromas of pear and thyme, with a creamy medium body and notes of white stone fruit and lemon, leading to a dry, mineral finish. Perfect with Marcona almonds and Manchego or Sardinhas Assadas, traditional Portuguese grilled sardines served with sautéed vegetables and bread.
