The vines are planted on slate and granite soils and are cultivated under an integrated production system that ensures optimal vineyard management. Harvesting takes place when the grapes are perfectly ripe and is carried out by hand during the cool hours of the night in 20 kg crates. This meticulous process facilitates a selective harvest and helps to preserve the delicate aromas of the grapes.
In the cellar, after the first pressing, the grapes are left to macerate for three days before being pressed again. The resulting must is then cold decanted, without the use of any additives, to allow spontaneous alcoholic fermentation. Throughout the winemaking process, there is minimal intervention, allowing the wine to develop its natural character. In addition, the wine has a low sulphur content, reflecting the commitment to producing wines with minimal intervention and additives.
