Ducking Pet Nat stands as a distinctive skin contact sparkling wine crafted from 15-year-old Sercialinho vines thriving in sandy soils within the Amoreira da Gândara vineyard. The grape harvest, occurring at the outset of September, sets the stage for a meticulous winemaking process. The grapes are pressed, initiating a spontaneous fermentation in stainless steel lasting four weeks under temperature control and ambient yeast. The fermentation concludes in the bottle, and the wine ages for an extended period on its lees without stirring. After six months of maturation, it is bottled in October and released to the public in February 2021. Notably, the wine maintains its authentic character through the omission of fining or filtration, allowing for an unfiltered and unadulterated expression of its terroir.
