Champagnes Bourgeois-Diaz has been cultivating vines for four generations on the south-south-west facing hillsides of Crouttes sur Marne, Nanteuil sur Marne and Villiers Saint Denis: 3.5 hectares of Pinot Meunier, 2 hectares of Pinot Noir and 1.5 hectares of Chardonnay, making a total of 7 hectares.
The vines are cultivated with great care: pruning, systematic debudding, grassing, ploughing and organic fertilisation. The estate is currently being converted to organic farming.
The grapes are pressed in a traditional Coquard press and vinified in stainless steel vats or oak barrels. Optimum ripeness is always sought, with little or no chaptalisation. Malolactic fermentation takes place.
