This 100% Gouveio white wine undergoes a distinct and traditional winemaking process. The grapes are meticulously crushed and foot-trodden, fermenting with the stalks for a duration of 5 days. Following this initial stage, the wine is pressed, and the alcoholic fermentation is completed in vats.
Post-alcoholic fermentation, the wine takes a unique trajectory. It is split into two vessels - a new chestnut barrel facilitates malolactic fermentation, whilst a stainless steel vat maintains the wine without undergoing this secondary fermentation. Both components then age for 5 months, with the barrel and vat contributing distinct qualities to the final composition, resulting in a nuanced and complex expression of the Gouveio grape.
