The vineyards are planted on slate and granite soils, which provide optimal conditions for growing grapes. Following an integrated production regime, the grapes are carefully harvested at peak ripeness. Hand picked during the cool hours of the night using 20 kg boxes, the grapes are carefully selected and their aromas preserved.
In the cellar, the grapes are directly pressed with the whole bunch, followed by cold decantation without the addition of any additives. Throughout the winemaking process, minimal intervention is used to ensure the purity of the final product. The wine has a low sulphur content, reflecting a commitment to natural winemaking practices.
Fifteen percent of the fermentation takes place in French oak barrels, giving the wine a subtle oak influence. Following fermentation, the wine is matured for six months in these barrels, adding to its complexity and structure.
