Grown on the northern slope of Mount Etna, the vines grow at an altitude of about 800 metres, on volcanic soil composed of basalt, which allows for ideal drainage. In a spirit of polyculture, which we still find in some areas of Italy, the vines coexist with olive and almond trees. The 24 hectares of the estate are mainly planted with the native Nerello Mascalese grape variety, which is also the basis of this cuvée. A noteworthy feature is that the vines are over 100 years old, are ungrafted and are the result of mass selection. The vineyard is cultivated organically, yields are very low and the harvest (manual) is late to allow the grapes to ripen optimally.
Fermentation begins with a pied de cuve, a technique that allows the use of indigenous yeasts while closely monitoring their evolution. Ageing takes place in stainless steel tanks so as not to alter the varietal aromas of the wine.
In the glass, it has a beautiful light red colour, suggesting finesse and elegance, immediately confirmed by a fresh and persistent bouquet with notes of red fruits and spices. On the palate, it is surprising, with soft tannins that integrate perfectly with the freshness of the wine. An exceptional red, which unfortunately is only produced in 15,000 bottles. It can be stored in the cellar for several decades without any problem.
