Planted on schist and granite soils, the grapes are grown under an integrated production system that ensures sustainable vineyard practices. Harvesting takes place at the optimum stage of ripeness, with the grapes carefully hand-picked into 20kg crates during the cool hours of the night. This meticulous approach allows for a selective harvest, preserving the aromatic qualities of the grapes.
On arrival at the winery, the grapes are rigorously sorted on a sorting table to ensure that only the highest quality fruit is selected. They are then gently transferred by gravity to the fermentation vats, where spontaneous alcoholic fermentation begins. Minimal intervention is used throughout the winemaking process, allowing the wine to express its true character. In addition, the wine has a low sulphur content, reflecting a commitment to natural winemaking practices.
