This wine is meticulously crafted from grapes harvested in the producer's private vineyards, nestled amongst the picturesque slopes of the rivers in the northern part of the municipality. The production process adheres to an integrated approach, emphasising the preservation of natural resources.
The grapes are carefully hand-harvested, and upon entering the mill, a manual selection of bunches takes place. The subsequent steps involve manual destemming and crushing. The must undergoes fermentation with indigenous yeasts, with an extended skin contact period of 4 weeks. Following this, the wine undergoes static decanting before entering a phase of one year of ageing in reused classic vessels. This method allows for the expression of the wine's unique qualities and a nuanced integration of its flavours.
