Nestled in soil distinguished by its schist and granite composition, the vineyards adhere to an integrated production system. Grapes are meticulously harvested at their peak ripeness, employing a manual picking method using 20kg boxes, specifically under the cover of night. This nocturnal harvest ensures a more meticulous grape selection and enhances the preservation of aromas. Upon reaching the cellar, the grapes undergo a gravity-fed process, passing through a sorting table for a rigorous selection before entering the fermentation vats. The emphasis is on spontaneous alcoholic fermentation, with minimal intervention throughout the entire winemaking process and a low sulphur content.
