The grapes come from vines that are over 25 years old and are planted in clay-limestone soil on two sites called São Lourenço and Óis do Bairro. At the end of August, the grapes are sorted by hand in the vineyards. Fermentation takes place in stainless steel tanks for three weeks, using the traditional method. The wine ages on its lees in the bottle. There is no fining or clarification. The wine is unfiltered.
