Dom Pérignon P3 1988 is a mature vintage champagne and the prestige cuvée of Moët & Chandon. According to Dom Pérignon's 'Plenitude' concept, there are three stages of development, or plenitudes, in the life of a vintage Champagne. The first plenitude spans seven to eight years after the vintage, which is when Dom Pérignon Vintage is released. The second plenitude is reached between 12 and 15 years after the vintage. The third plenitude, represented here by this iconic 1988 vintage Champagne, is reached after around 30 years, with the Champagne having spent over 20 years on lees. It is described as "very pale tomatoey pink with a very gentle mousse".
