Fermentation: The finest Portuguese grapes, revered as monarchs, were pressed quickly after harvest to delicately extract the pigments from the skins. The resulting ruby red juice underwent a gradual fermentation in the cool confines of the winery using only indigenous yeasts.
Ageing: As the primary fermentation neared completion, the wine was transferred to the talha, where it was securely sealed for a rigorous 9-month ageing process. This transformative period gave the wine a bone-dry character, achieving an exquisite balance between fruitiness and minerality.
Tasting notes: This wine has a subtle bouquet reminiscent of Bing cherries and red fruits. The palate is characterised by a pronounced, pure minerality, accompanied by a nuanced fruitiness. The talha imparts a robust, dry beeswax finish, harmonised by a medium acidity.
