Despite being away from the media limelight, Ataíde Semedo stands as a notable figure in Bairrada, and his wines consistently grace the glasses and tables of discerning wine enthusiasts. With a charismatic presence, Semedo embarked on his journey into the world of wine in 1978, initially joining a Bairrada-based company with familial ties. His responsibilities spanned both the commercial and oenological realms.
In terms of vinification, the process involves total destemming of the grapes, followed by fermentation in open vats (4000 litres) for 6 to 7 days, all under meticulous temperature control (26/28ºC). The resulting wine undergoes a maturation period of 9 months in French oak barrels, followed by an additional 6 months of ageing in the bottle.
