Yellow in colour, this wine has a fresh and mineral profile with citrus and herbaceous notes. Its well-balanced acidity is complemented by a rich and warm touch, with volume and a salty character. The finish is fine and harmoniously balanced between acidity and salinity.
The grapes are hand-picked and the whole bunch is pressed in a vertical press. After decanting, fermentation takes place spontaneously in stainless steel tanks and 20% of the wine is aged in French oak barrels with bâtonnage. This process gives the wine a delicate texture and depth.
Ideal pairings include fresh shellfish such as limpets and barnacles, fish and white meats. This wine is a numbered and limited edition, making it a rare and unique experience.
