Grapes sourced from ancient vineyards on the Mirandês Plateau, situated at an altitude exceeding 600 metres, thrive in schist soils with varying exposures. Grape Varieties: The vineyards predominantly feature Rabigato, Gouveio, Malvasia-Fina, and Malvasia-Rei.
Vinification: The process begins with total destemming upon reception, followed by a 24-hour skin maceration. Soft pressing ensues, with fermentation taking place in stainless steel vats without temperature control.
Maturation: The wine undergoes an 18-month maturation period in exceptionally old French oak barrels.
Tasting Note: This wine presents a rich and complex aroma, featuring notes of crystallised orange, beeswax, vanilla and white pepper. The palate is equally intricate and creamy, revealing multiple layers and culminating in a saline finish.
