Roland Piollot, together with his wife Dominique and daughter Jeanne, produces refined and elegant cuvées from their 8.5 hectares of mainly Pinot Noir vineyards around the village of Polisot. In 1986, Roland took over the family estate and inherited his father's passion for winemaking. Since 2014, Piollot Champagne has been produced entirely organically, and the estate recently achieved Demeter certification for its commitment to biodynamic farming practices.
