The vines used to make this cuvée grow on the hillsides of Chatillon-sur-Marne, on the right bank of the Marne. Facing east and rooted in clay-limestone soils resting on a chalky subsoil, these vines produce wines with a unique identity. Les Lériens is a blend of the classic Champagne grape varieties, including Pinot Noir, Meunier and Chardonnay. All of these grapes are grown organically in soils that are largely worked by hand. The grapes are harvested by hand, plot by plot. The result is precise, well-balanced juices that ferment spontaneously thanks to indigenous yeasts. Malolactic fermentation is then carried out in oak barrels to give the wine more roundness, after which it undergoes a long period of ageing on fine lees in barrels that have previously held three to six wines. The wine is neither fined nor filtered before bottling. Dosage is limited to 2.7 grams of sugar per litre to avoid altering the wine's character. The end result is a pale champagne with a subtle aroma of citrus, fresh almonds and brioche. The palate is supple, light and flavourful. This lovely champagne would complement a salmon parcel, for example.
