Refinement and pleasure are the hallmarks of this Rosé Extra-Brut, a blend of Chardonnay from the Mesnil-sur-Oger Grand Cru (70% of the blend) and Pinot Noir from Ambonnay.
Here, too, it's the Campanian Chalk that takes pride of place, in the heart of the Côte des Blancs, with the incomparable Chardonnays of Mesnil-sur-Oger, but also on the Montagne de Reims and the Ambonnay terroirs, a true paradise for Pinot Noir, which gives the wine its vinous expression, around small red fruits that are greedy and invigorating, without losing any of its natural elegance.
This rosé blend is made by adding about 3% of red Coteau Champenois, also from Ambonnay. As is always the case with Xavier Gonnet, the still wines are aged exclusively in old barrels, which allows for a controlled oxidation without "woodifying" the wines' aromas: this is one of the domain's specialities and allows Xavier to be extremely precise in his blends. The base wine is blended with about 20% of a perpetual reserve.
