We continue to use traditional methods to make and age Madeira wine.
This 1978 Sercial has been aged using the traditional Canteiro method since February 1979. In February 2008, it was transferred into 60-litre demijohns, where it has remained ever since. This has helped to contain the rapid concentration that occurred in the wine during its 29 years of ageing in casks, thus maintaining the balance between sweetness and acidity that we consider ideal for this wine. In March 2015, 600 bottles were filled.
