The most famous white Burgundy Grand Cru. The vines are located in the commune of Puligny-Montrachet. East facing, with an axis to the east and south. A very sunny exposure. Soil: Comes from the Jurassic period (175 million years old), on thin soils, alternating marl, marly limestone and stones. The vines are pruned in the Guyot (Poussard) method, with various pruning techniques (pruning, trellising, topping). Barrelling after a light settling. The must is transferred to 228-litre French oak barrels (25% new), where alcoholic and malolactic fermentation takes place using indigenous yeasts and bacteria. The wine is aged for 18 months on fine lees. Without battonage. One month before bottling, the wine from the different barrels is blended in a stainless steel tank. The wine is then lightly fined and lightly filtered before bottling. Bottling takes place according to the lunar calendar.
