In the cellar, the work begun in the vineyard is continued: the use of top-of-the-range equipment in the service of traditional winemaking for the best natural expression of the terroir, slow fermentation with indigenous yeasts naturally present on the grapes, long ageing on fine lees in oak barrels from the best French forests, with a fair and economical use of new barrels, respect for the lunar calendar in all phases of winemaking and bottling in order to preserve all the energy of the terroir.
