Chassagne-Montrachet Premier Cru Morgeot is a dry white wine made from Chardonnay grapes grown in hillside vineyards with a western exposure and stony-limestone soils. The grapes are hand-picked from 50-year-old vines, with primary sorting on the vine. The grapes are gently pressed with a pneumatic press under low pressure to ensure a slow extraction of the pigments and aromatic substances. The must is then left to stand for 24 hours. Alcoholic and malolactic fermentation takes place in 228 litre French oak barrels (25% new) for 18 months. The wine is aged on fine lees. Before bottling, the wine from different barrels is placed in steel tanks for one month to stabilise and blend. Bottling, which takes place on a specific day according to the lunar calendar, is preceded by light filtration.
