Dom Pérignon is produced only as a vintage champagne, and only in exceptional years. Each vintage is a unique creation that reflects both the characteristics of the year and those of Dom Pérignon. After ageing in the cellars for at least eight years, the wine enters its first phase of interest, Plenitude 1, displaying youthful fruitiness and a broad texture resulting from contact with the lees. The signature Dom Pérignon aroma is that 'hint of smoke', resulting from reductive winemaking, where they go to extreme lengths to keep each step of the process free of oxygen. With every sip of Dom Pérignon, you experience the purity of the fruit character. Depending on the vintage, the Pinot Noir fruit tends to dominate with its red fruit notes, such as raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious yellow-fruit notes, such as plum, apple and pineapple.
