It is a bright golden yellow with fine bubbles. The aroma is of ripe pears, apples, quinces, stored apples, fennel pollen, marzipan, cinnamon, ginger and a hint of cubeb pepper. Taste: Initially silky and rounded with pleasant volume, it becomes increasingly slender with precise acidity and a mineral imprint. Character: An elegant and complex Blanc de Meunier, balancing fullness and finesse. Young, with great potential for development. Food pairing: Fried scallops, lobster with butter and creamy mushroom dishes. Special features: A single-varietal Meunier from the 'Pierre de Bellevue' vineyard. Spontaneous fermentation. Seven months on lees in Burgundy barrels. No malolactic fermentation or dosage.
