Thriving in soil enriched with schist and granite, the grapes hail from an integrated production system and are meticulously harvested at the pinnacle of ripeness. Handpicked under the cover of night in 20kg boxes, this method ensures meticulous selection and heightened preservation of the aromatic profile.
Within the cellar, following the initial pressing, the grapes undergo a three-day maceration before subsequent pressing. The resulting must undergoes a cold decantation without the use of additives, and spontaneous alcoholic fermentation takes place. The winemaking process maintains a philosophy of minimal intervention, allowing the natural processes to unfold, and is characterised by a low sulphur content.
