Pressing and decanting are carried out in stainless steel vats, and fermentation takes place in the same vats at a temperature of between 16 and 18ºC, before being completed in the bottle. The wine is then racked after 3 months. This Ancient Method sparkling wine is made from a single fermentation, without the addition of yeast or sugar.
