The iconic village of Cramant is a mecca for Chardonnay. Its deep Campanian chalk soils produce wines of unrivalled purity, finesse, and tension. The grapes are grown in certified organic vineyards and harvested by hand at peak ripeness. Spontaneous alcoholic fermentation is carried out by indigenous yeasts in oak barrels. Apart from a very low level of sulphur dioxide, no additives are used. The wine is aged on fine lees for several months, followed by a period in bottles for secondary fermentation and long ageing on racks.
On tasting, the wine reveals a pale gold colour crossed by fine, regular bubbles. The aroma evokes notes of flint, citrus zest, vine blossom and fresh hazelnut. On the palate, it is truly mineral: straight, salty and chiselled, with superb length and candied citrus zest.
