Benoit Courault, a qualified sommelier, has always been fascinated by the elements behind the bottle. About twenty years ago, Benoit decided to take a course that would allow him to learn more about the world of wine: he enrolled at the Beaune Wine School (also known as "Viti"), where he did several internships in Côtes de Nuits estates. Benoit has always been drawn to organic and biodynamic wines. After this training, he found a job as a winemaker at the Domaine de l'Anglore in Tavel, with one of the popes of natural wines, Eric Pfifferling. This experience would be decisive for his approach to the vineyard and the cellar. 3 years passed and Benoit decided to go into business for himself, to return home, so to speak. He and his wife bought a 5-hectare vineyard in Anjou, and from the outset they worked in the most natural way possible. Low doses of copper and sulphur are used in the vineyard, along with herbal teas to balance the plant. He also experiments with green fertilisers (also known as 'cover crops') in his vineyards, with the aim of keeping his soil, and therefore his vines, as balanced as possible. The classic Anjou grape varieties are cultivated: Chenin Blanc, Cabernet Franc, Grolleau Noir and Pineau d'Aunis. In the cellar, there is little intervention and NEVER new barrels. Benoit gets his supplies from friends where he finds old, well-kept barrels. When the cellars warm up in spring, Benoit reserves the right to add very little sulphite to his reds and whites. But there is no automatic reaction: this kind of decision is made only during the tasting. We found his wines to be very open and very drinkable. We are therefore happy to offer them for sale.
