This wine is crafted from a careful selection of premium grapes chosen upon their arrival at the mill, sourced from the producer's vineyards featuring seven of the finest varieties in the region.
The entire grape bunches undergo traditional foot-treading in granite presses, fostering fermentation with indigenous yeasts and without temperature control. Following fermentation, the wine matures for two to three months, where malolactic fermentation occurs in stainless steel vats. Subsequently, it undergoes a minimum of 18 months of ageing in used barrels.
The final touch is given after patiently waiting for 30 months, as the wine is expertly bottled, reflecting the culmination of its unique journey and distinctive characteristics.
