The goal is to express the authenticity and purity of the Bairrada terroir through artisanal methods of crafting sparkling wine.
The vineyards are situated in the Ancas area, on the finest clay-limestone soils of Bairrada. Grape Variety: 100% Baga.
The process involves total destemming, soft pneumatic pressing, and alcoholic fermentation at 18°C. The second bottle fermentation follows the traditional method.
Tasting Note: This sparkling wine displays a pale copper colour. The aroma is intense and complex, with dry fruits and prominent notes of bread yeast within an austere ensemble. On the palate, the bubbles are fine and plentiful, with a soft and creamy foam that reveal freshness and persistence on the finish.
