The vines are planted on slate and granite soils and the grapes are grown under an integrated production system that ensures sustainable vineyard practices. Harvesting is carried out meticulously at optimum ripeness, with the grapes hand-picked into 20kg crates during the cooler hours of the night to preserve their aromatic potential.
On arrival at the winery, the grapes undergo a rigorous selection process on a sorting table to ensure that only the highest quality fruit is used. They are then gently transferred by gravity to the fermentation vats, where spontaneous alcoholic fermentation begins. Throughout the winemaking process there is minimal intervention, allowing the wine to develop its natural character. In addition, the wine has a low sulphur content, reflecting a commitment to natural winemaking practices.
