This wine from the island of Pico embodies the essence of Azorean viticulture, made from 90% Azorean Arinto and 10% Pico Terrantez, Azorean Verdelho and Boal - all autochthonous varieties specific to the Azores and different from their mainland counterparts. The vines are between 40 and 80 years old, a testament to the heritage of this volcanic terroir.
The grapes are vinified using the traditional foot stomping method before pressing in a vertical stainless steel press, followed by indigenous fermentation, which enhances the wine's authentic character. After alcoholic fermentation, minimal sulphiting is applied, both post-fermentation and before bottling. For ageing, 72% of the wine is aged on its lees in stainless steel for 9 months, while 28% is aged in used barrels for 6 months, creating a balance of freshness and complexity. This wine reflects the strength and dedication of Pico's unique, heroic viticulture.
