The grapes were pressed using a continuous press in September 1982. Fortification took place while the must was still fermenting and in a semi-dry state (2 Baumé). The ageing process began in March 1983 in old 620-litre French oak barrels in Warehouse A, which is considered the warmest of the warehouses where we store our wines. In November 2013, some of the wine was transferred to 64-litre demijohns. The remainder was placed in 430- and 450-litre barrels in Warehouse D, which has significantly lower average temperatures than Warehouse A.
The excess concentration acquired during the first 30 years of ageing was substantially reduced over the following 12 years thanks to the change of warehouse and the use of smaller barrels that were always filled. This practice restored the wine's freshness and enhanced its acidity. For this bottling, we selected a 430-litre cask, limited to 300 units.
